Cheesy Corn Balls

Ever wondered why the phrase “say cheese” is used just before a photograph is clicked? Simply because ‘cheese’ makes one smile! Not only the word but cheese as a food makes a lot of palates happy. It is an inexpensive, versatile and nourishing food. We have our very own Indian version as well as the ones made from soy milk that are even healthier. Whichever form, this is one food that is loved by one and all!

Ingredients: 

  • Processed Cheese grated 3 tbsp

  • Corn Kernels tinned 1 cup

  • Butter 2 tbsp

  • Refined flour (maida) 2 tbsp

  • Milk 1 cup

  • Green chillies finely chopped 1 tbsp

  • Salt to taste

  • Black pepper powder 1/2 tsp

  • Cooked rice 1 cup

  • Fresh coriander leaves a few sprigs

  • Fresh bread crumbs 2 tbsp

  • Oil to deep fry

  • Cheese slice 

  • Tomato ketchup as required


Preparation:

Heat butter in a non stick pan. Add refined flour and saute for 1 minute. Add milk and whisk well so that there are no lumps. Switch off the heat and add cheese and mix. Drain corn kernels and add and mix well.

= Add green chillies, little salt, black pepper powder and mix. Mash cooked rice and add. Chop a few sprigs fresh coriander leaves and add. Add 2 tbsp fresh bread crumbs and mix well and let it cool.


= Heat sufficient oil in a kadai. Spread a little breadcrumbs in a plate Divide the mixture into equal portions and shape them into balls.


= Roll them in bread crumbs and deep-fry till golden and crisp. Drain on absorbent paper.


= Arrange them on a serving plate. Cut a cheese slice into small triangles and place one on each cheese ball. Garnish with a little chopped coriander leaves and serve hot with tomato ketchup.
