1. Buffalo Cauliflower Bites Ingredients: 1 large head of cauliflower, cut into bite-sized florets 2 Tbsp olive oil 1 cup panko breadcrumbs 1 tsp garlic powder Salt and pepper ¾ cup Buffalo hot sauce 2 Tbsp butter, melted Ranch dressing for dipping Celery to serve alongside Preparation : Preheat oven to 450°F. In a small bowl, combine breadcrumbs, garlic powder, salt and pepper. Set aside. In a large bowl, coat cauliflower with olive oil. Pour prepared breadcrumbs over cauliflower and toss to coat. Spread cauliflower on a parchment-lined baking sheet. Roast for 10 minutes. In a large mixing bowl, combine Buffalo sauce and melted butter. Add roasted cauliflower, toss to coat. Return to parchment-lined baking sheet; roast for another 5 minutes. Serve with ranch dressing and celery. -------- 2. INGREDIENTS: => 6 kiwis, peeled and chopped => 2 ripe mangoes, peeled, cored, and sliced => 1 melon, peeled, cored, and chopped => 1 quart strawberries, hulled and quartered => 1 quart blackberries => 1/2 quart blueberries FOR CUSTARD: => 1 1/2 cups whole milk => 2/3 cup sugar => 6 large egg yolks => 2 tablespoons unsalted butter, softened => 1/2 teaspoon vanilla extract PREPARATION: For Fruit: => Place fruit into a large bowl and toss together. For Custard: => In a medium saucepan over medium heat, whisk milk and sugar constantly. => In a medium bowl, whisk together the egg yolks. Slowly incorporate the hot milk into the egg mixture. Return the mixture to the saucepan. Heat the custard over low heat about 5 minutes or until thickened slightly, stirring constantly. (It should be thick enough to coat the back of a spoon. Sticky Honey Chicken Wings

INGREDIENTS: => 20 pcs of Chicken Wings => 4 tsp of Fresh Garlic, crushed => 4 tbsp of Tomato Sauce    (thick Ketch-up) => 3 tbsp of Soft Brown Sugar => 3 tbsp of Honey => 4 tbsp of Soy Sauce => 1 tbsp of Vinegar PREPARATION: = Pre-heat the oven to 200' C (400' F) - spray a large oven dish with cooking oil. = Arrange the Chicken Wings in a single layer in the oven dish - a little overlapping is fine = Combine the remaining ingredients  in a small bowl - pour over the Chicken - bake for 20 minutes, remove from the oven and turn over the Chicken (spoon over some of the sauce which is at the bottom of the oven dish) - return to the oven and bake another 25 - 30 minutes until cooked through and sticky. = Serve with sides, salads or vegetables, a dinner roll and/or mashed potatoes.

Polenta with Mushroom Sauce

Ingredients => Polenta 3/4 cup => Button mushrooms 7-8  => Dried oyster mushrooms soaked 4-5  => Vegetable stock 1 cup => Milk 1/2 cup => Extra virgin olive oil 8 tablespoons =>  Black pepper powder 1/2 teaspoon => Salt to taste => Garlic crushed 2 tablespoons => Crushed black peppercorns 1/4 teaspoon =>  Fresh cream 4 tablespoons =>  Processed cheese 25 grams  => fresh curly parsley 1 sprig  => Fresh thyme 1 sprig => Fresh mint leaves 1 sprig Preparation = Pour vegetable stock in a deep non-stick pan. = Add ¼ cup milk and heat.
