Matar Paneer


The Matar Paneer is the nest when you plan for a special meal. This cuisine takes some time since the onions and tomatoes are sautéed first and puréed. This is wat makes the dish simply superb & unique.

Ingredients:

To fry & puree:

=> 1 tbsp oil
=> 2 cardamoms
=> 3 cloves of garlic
=> 1 inch Ginger (cut into pieces)
=> 1 cups of Onions (cubed)
=> 11/2 cup of Tomatoes (chopped)
=> 10 nos of Cashewnuts
=> 1/2 tsp of Salt

For Matar Paneer Gravy

=> 2 tbsp of Butter
=> 1 inch of Cinnamon (optional)
=> 1 nos of Small Bay Leaf
=> 3/4 to 1 tsp of Red Chili Powder 
=> 1/8 tsp of Turmeric
=> 3/4 to 1 tsp of Hot Spices Powder
=> 1/2 to 3/4 cup of Green Peas
=> 1 - 1 1/4 cup of Water
=> 1 nos of Green Chili
=> 25- gms of Paneer (Cottage Cheese)
=> 1 tsp of Dried Fenugreek Leaves (Kasuri Methi)
=> 1/4 tsp of Salt
=> 2 tbsp odd Coriander Leaves
=> 3 - 4 tbsp of Cream

Preparation;

Muter Paneer preparation

= If using store bought paneer, soak it in a bowl of hot water for 20 mins. Drain the water and use. This will help to keep the paneer soft.

= Pour 1 tbsp of butter to a hot pan.

= When the butter melts, add 2 green Cardamoms, Ginger & Garlic. Fry for a min.

= Add 1 cup of Chopped Onions & fry until they turn light golden. 

= Put in 1.5 cup of Tomatoes, Turmeric & Salt. Sauté for 2 - 3 mins. Cook covered until soft & mushy. 

= Add 10 Cashews. Cool this completely. Make a fine pureé of this in a blender without water.


Preparing Mater Paneer

= Heat butter in a same frying pan. Sauté 1 inch Cinnamon & 1 Bay Leaf for a min. Pour the pureéd Onion Tomato mixture.

= Add Chili Powder, Hot Spices Powder & Coriander powder. Sauté until the masala leaves of the sideds of the pan. Keep stirring to prevent burning.

= Add Green Peas. Pour water. If using fresh peas, boil them until tender in a pot, drain and use; If using fozen peas, then you can rinse & use. 

= Mix well to make a thick gravy. Add more water if needed. Mix & cook covered on a medium heat until the gravy thickens & traces of oil apper over the gravy.

= Crush Kasuri Methis in your palm & sdrikle allo ver. Mix well. Check Salt & add more if needed.

= Add Green Chili & Cubed Paneer. Cover & cook just of 2 mins. Sprinkle Coriander Leaves & Cream. Stir well.

= Serve matar paneer with rice, naan or paratha.
