This is another kind of Chinese & Malayu Traditional Cuisine, which is served in Lotus Leaf Parcel. It's tasty, delicious and also looks attractive at the same time.
Ingredients:
=> 2-3 tbsp of Cooking Oil
=> 3 cloves of Garlic
=> 200 g of Chicken Fillet (cubed & marinated with some sesame oil & corn flour)
=> 50 g of Fresh Mushrooms
=> 30 g of Dried Scallops (rinsed & soaked)
=> 30 g of Dried Clams (rinsed & soaked)
=> 1 tbsp of Soaked Fatt Choy
=> 1 can of Braised Peanuts (bought from stores)
=> 1 tsp of Kei Chi (soaked)
=> 2 cups of Basmathi Healthy Rice
=> 1 tsp of Dark Soy Sauce
=> Salt, Pepper to taste
=> 2 & 1/4 cups of Chicken Stock
For Garnish:
=> Chicken Floss
=> 1 Lotus Leaf
Preparation:
= Wash the Basmati Rice in water, drain & set aside. Wash the Lotus Leaf also, Soak & set aside.
= Heat oil in a wok, sauté the Garlic until light brown. Add the Chicken Meat & Mushrooms; sauté until meat is fragrant.
= Add the rest of the ingredients & cook for 2 mins. Let the water simmer until all the stock get absorbed by the Rice.
= Remove from heat & transfer the rice mixture onto the cleaned Lotus Leaf. Wrap the leaf into a Parcel & place in a boiling steamer. Steam for 20 mins.
= Garnish with the Chicken Floss & Serve warm.
