This eggplant cuisine is full of cheese and the combination of other regular vegetables that you like. It's healthy and delicious at a same time.
=> 1 Eggplant (sliced into 1/2 inch thick rounds)
=> 3 Tomatoes (sliced)
=>1 tbsp of Extra Virgin Olive Oil
=> 1 tsp of Oregano
=> 1/3 cup of Grated Parmesan Cheese
=> Salt to taste
=> Ground Black Pepper to taste
= Set your oven to 200*C.
= Place Tomato slices and Eggplants into a non-stick baking dish. Drizzle with Olive Oil and season with Salt, Pepper & Oregano. Sprinkle some Cheese.
= Bake until the cheese begins to brown or about 30 mins. Set oven broiler to high then continue baking for 5 mins. or until cheese turns completely brown.
= Garnish & sprinkle with some chopped Parsley.
= Serve hot.
