Rivpot N - Vegetable Rice

"Rivpot N" is a Code Name for this cuisine, where 'Rivpot' comes from the ingredients that have been used to make this and the "N" is the shot-name of 'Nawabi style'. Yes, this cuisine is a kind of Nawabi (Mughal) Style cuisine based on the taste and the ingredients which actually the Nawabi Chefs used to cook their foods. It'll taste with the combination of various tastes which can bring the Mughal Generation in your Table.

Ingredients:


=> 250g of Rice
=> 2 Green Capsicum (diced)
=> 2 Red Capsicum (diced)
=> 2 Yellow Capsicum (diced)
=> 5 Long Beans (diced)
=> 3 Potatoes (diced)
=> 2 tbsp of Khorma Powder
=> 1 tsp of Chili Flakes
=> Salt to taste
=> 1/2 cup of Lemon Juice
=> 1 tbsp of Milk Powder
=> 3 nos of Eggs (Mixed with salt)
=> 2 Large onions (Chopped)
=> 5 cloves of Garlic (Chopped)
=> 1/2 tsp of Paprika Paste
=> 1/2 tsp of Kesar Paste
=> 1 tsp of Nutmeg Paste

Preparation:


= At first. boil the rice until it becomes as same like Steamed Rice. Preserve the water, don't throw.

= Heat oil, add Garlic & Onion and fry for a while. Add the Eggs and cook until the whole things become Creamy Texture. Take them into a dish.

= Heat oil again. Add the potatoes and fry for a while. Add Capsicums, Loan Beans, and cook for a min. Add the rice-boiled water* and bring it to the boil.

= Add the spices one-by-one including the salt and let it boil until the spices gets absorbed with the ingredients. Add Lemon Juice and stir it until everything gets mixed properly.

= Now add back the Egg mixture and stir continuously so that it doesn't become thick. Immediately add the steamed rice and continue stirring. Check the taste and correct if needed.**

= Take the whole thing to a serving dish. Garnish with Fried Onions*** and Chopped Parsley.

= Serve hot.

 

Tips:

  1. You can use the Eggs as Hard Boiled if you don't prefer that it should be mixed with the ingredients like I've used.

  2. You can also keep the Steamed Rice separate, not mixed with everything if you want to taste the cuisine with Steamed Rice separately.

  3. You can also add Sugar, if you want to bring the Sweetness also in this cuisine. But you've to be careful while adjusting the Sugar with other spices.

Note:
* Rice-Boiled water can bring the nutritious value for rice, specially the Starch. It's Optional, you can use Hot Boiling Water instead.
** Before adding the Egg Mixture, try checking & correcting the taste, because Eggs will start making the water thick and later you might not be able to do this.

*** Fried Onions must be fried in Dark Golden Brown color. Not more & less than that.
