Pav Bhaji - a spicy curry of mixed vegetables cooked in a special blend of spices and served with soft bread pav toasted in butter. Pav Bhaji is one of the most popular Indian snacks, especially in Maharashtra. It is a delicious combination of different vegetables cooked and mashed together. This is one dish, loved by people of all ages and cooked with different variations in different households. Pav Bhaji is the smartest way to have all the healthy vegetables together without compromising on the taste. So let's begin with it.
=> Potato - 3 (medium sized, peeled)
=> Carrot - 2 (peeled and roughly chopped)
=> Cauliflower - 3-4 (roughly chopped)
=> Green peas - 1/4 cup
=> Onion - 1 (finely chopped)
=> Ginger Garlic paste - 1 tbsp
=> Tomatoes - 2 chopped
=> Salt to taste
=> Capsicum - 1/4 cup (finely chopped)
=> Red Chili powder - 1/4 tsp
=> Kashmiri Red Chilli Powder - 1 tbsp
=> Coriander powder - 1 Tsp
=> Cumin powder - 1/4 tsp
=> Pav Bhaji Masala - 1.5 Tsp
=> Turmeric Powder - a pinch
=> Lemon juice - 1/2 lemon
=> Oil - 2 tbsp
=> Butter - 2 tbsp and for serving
=> Pav Buns - 8
=> Coriander leaves - 1 tbsp
For Bhaji
= Take a pressure cooker. Add peeled and chopped carrot and potato. Add chopped cauliflower and peas as well.
= Add 2 cups of water and cover it with lid.
= Cook on high flame until it gets the first whistle. After the first whistle put the flame on low and let it get another 3-4 whistle.
= Put a pan on flame, add oil and butter. Let the butter melt.
= Once the butter has melted add finely chopped onion and ginger garlic paste. Mix and cook on low-medium flame for 3-4 minutes.
= Furthermore, add chopped tomatoes, finely chopped capsicum and salt.
= Mix and cook until tomatoes turn soft(it takes around 4-5 minutes on low flame)
= Meanwhile, let's mash boiled veggies(which we boiled in the pressure cooker before) with a potato masher as shown in the video above.
= Our onion tomato is well cooked now. Let's add all dry masalas i.e, a pinch of turmeric powder, Kashmiri red chilli powder, red chilli powder, cumin powder, coriander powder and pav bhaji masala. Mix and cook on low flame for 2-3 minutes on low flame.
= Once the masala is well cooked add 2 cups of water. Mix and let it get a boil.
= Now add boiled and mashed veggies. Mix and let it cook for 5-7 minutes.
= Adjust salt as per your taste. And last but not least add lemon juice and coriander leaves.
= Mix and our yummy, tasty and drool-worthy Bhaji is ready.
Prepare Pav
= Take a skillet, apply butter on pav (both sides) and toast it till they are nice and light brown.
= Serve hot along with onion and lemon.
