
A spicy & tasty Brinjal Fritters (Beguni) is very well-known & simple to cook. It is best served as a tea time snack or as a side dish with khichuri or polaw.
Ingredients:
=> Brinjal / Eggplant : 1 piece (finely sliced)
=> Gram flour : 100 gm
=> Rice flour : 50 gm
=> Black cumin seed : 1 tsp
=> Turmeric powder : ½ tsp
=> Red chili powder : 1 tsp
=> Salt : to taste
=> Black salt : ½ tsp
=> Mustard oil : 200 gm
=> Sodium-bi-carbonate : 1 pinch
Preparation;
= Wash brinjal slices & rub with ½ tsp salt. Keep aside.
= Make a thick batter with gram flour, rice powder, sodium-bi-carbonate, black cumin seeds, turmeric powder, red chili powder, salt & water.
= Heat oil in a wok. Take 1 slice of brinjal. Dip into the thick batter & deep fry in the hot oil.
= Take out fried brinjal (begunee). In this same procedure fry all the brinjal slices. Sprinkle black salt.
= Serve hot.
