Turn your favorite cinnamon-y snack into triangles of crispy goodness, topped with caramel, chocolate and spiced whipped cream.

Ingredients:
- Churro waffle batter:
- => 1 cup water
- => ½ cup unsalted butter, cubed
- => 1 Tbsp molasses
- => ½ tsp cinnamon
- => ¼ tsp cayenne pepper
- => 1 cup all-purpose flour
- => 2 large eggs
- => 1 cup sugar + 1 tsp cinnamon
- => Caramel sauce, to garnish
- => Mexican chocolate sauce:
- => 2 oz dark chocolate, finely chopped + more for shavings
- => 1 Tbsp coconut oil
- => ¼ tsp chili pepper
- Cinnamon whipped cream:
- => 2 cups heavy cream
- => ¾ cup confectioners' sugar
- => 1 tsp ground cinnamon
- => ½ tsp vanilla extract
Preparation:
=> To prepare the dough, in a medium saucepan over medium heat, add water, butter and molasses. Stir until butter is completely melted.
=> Turn off heat and add in cinnamon, cayenne and flour. Stir to combine, then add eggs and stir until dough is uniform. Remove dough from pan and allow to cool for 10–15 minutes.
=> Lay out the baking blanket, add dough and fold baking sheet in half over dough, flattening it. Unfold baking blanket, and cut dough into 4 square pieces.
=> Heat a waffle iron and lightly spray with oil. Add square dough pieces and cook 4–6 minutes. Remove from waffle iron and coat in sugar and cinnamon mixture. Cut each piece into 4 triangle chip shapes.
=> Bring a double-boiler to a simmer over medium-low heat. Melt the chocolate, then remove from heat. With a wooden spoon, stir in coconut oil until the sauce is smooth. Add a pinch of chili pepper.
=> In a large bowl, using a mixer set on medium-high speed, beat the cream, sugar, cinnamon and vanilla until stiff peaks form.
=> Assemble nachos: Layer waffles, caramel sauce, Mexican chocolate sauce and whipped cream. Repeat, topping final layer with whipped cream and dark chocolate shavings.
