
Ingredients:
=> 1 tbsp of Olive Oil
=> 1 Small Onion (thinly sliced)
=> 8 oz of Boiled Chicken Breast (thinly sliced)
=> 1-2 tbsp of Red Curry Paste
=> 6 cups of Chicken Stock
=> 2 Tomatoes (chopped)
=> 5 oz of Baby Corn (canned)
=> 4 tbsp of Coriander (chopped)
=> Grated Zest of 1/2 Lime
=> Salt to taste
=> Sugar to taste
Preparation:
= Heat oil in a soup pot, add onion, fry to soften. Add curry paste & cook for 2 mins.
= Add Chicken, chicken stock, tomatoes and baby corn. Cook until heated through.
= Season with salt & sugar.
= Served with coriander and lime zest.
