#) Sponge Cake is a basic cake item, looks like a sponge. Let me tell you about the process of making:

Ingredients:
=> Butter (softened) ----- 125 g
=> Caster Sugar ------ 125 g
=> Eggs ----- 2 nos
=> Self rising flour ----- 125 g
Preparation:
= Take the butter and sugar to a mixing bowl and mix until cream and the sugar gets mixed properly. {no sugar can be felt visible}
= Beat the eggs, add flour with it and mix properly. It should be in dropping consistency. If not, you can use milk.
= Mix with the butter-sugar mixture. Make sure the dropping consistency persists.
= Pre-heat the Oven (elec.) to 180 C or (Gas) to 4. Line two cake tins with baking parchments.
= Divide the mixture into the cake tins and gently spread out with a spatula. Put the tins into the pre-heated oven.
= Bake for 20 - 25 mins. Insert a skewer in the cakes to test, if it comes out clean then understand it's done.
= Take out from the oven. Allow to stand for 5 mins. Transfer them to a plate.
= Make sugar syrup in a pot. Then spread the syrup using a teaspoon over the cakes to make them soft and glow.
= Sandwich the cakes with a jam {what you like}, lemon curd or whipped cream and berries. You can also decorate with cream using piping bags.
