#) Chicken A'la King is an international high standard cuisine. It's very easy to make but very expensive. Let's try to make this (for 1).
=> Butter ----- 10 g
=> Red Capsicum ----- 10 g
=> Green Capsicum ----- 10 g
=> Mushrooms (Sliced) ------ 20 g
=> Boneless Chickens ----- 100 g
=> Sherry Wine (optional) ----- 50 ml
=> Chicken Velouté Sauce* ----- 150 ml
=> Fresh Cream ----- 50 ml
=> Egg Yolk ---- 2 nos
=> Salt ----- to taste
=> White pepper ----- 1/2 tsp
=> Sugar ----- 1 tsp
Preparation:
= Cut the capsicums into dice by removing the seeds.
= Melt butter to a fry pan. Fry the Capsicums until soft & tender. Add the sliced mushrooms and toss well.
= Cut the chickens into 3 mm. diced and fry them with the elements you tossed.
= Add the seasonings (you can add sherry wine). Toss them well. Add the chicken velouté sauce and bring to the boil.
= Whisk the egg yolk and add with the elements and mix quickly. {so that the egg yolks can get mixed with the elements and creates to whitish shreds}. Make sure the liquid becomes sticky & creamy.
= Taste and correct the seasonings. Make a round boundary with Mashed Potatoes around the dish and pour the dish in the center. Sprinkle with chopped coriander leaves.
= Serve hot.

* To make Chicken Velouté: In a frying pan, melt butter. Add some (all purpose) flour and fry until sandy texture. Add white chicken stock and cook until it becomes thick. It's ready!
